Pan con tomate

I really, really, really hate the fact that pretty much everything essential to being a vaguely content and functioning individual is now an aspirational video on some kind of social media. A quick jump into the shower with whatever shower gel was on offer that floated my boat (always, always, always the citrus smelling ones here, plz) and dragging a razor that has seen better days across my pits just doesn’t seem to be enough.

No, instead we should all be dropping oils into our hair and using a special scrubby brush and a slick of moisturiser really isn’t worth it unless we have also applied 4 other serums and potions and then we need to be ‘resetting’ our homes as well. Sort of like a hot shower and a quick hoover make us slovenly or something.

I promise you that you are doing just dandy, special offer shower gel and everything.

Which is why I feel a bit guilty telling you about my favourite breakfast; pan con tomate. It is quite simple, but it is the very definition of a bit ‘extra’. So if the thought of doing this makes you feel inadequate, please don’t. Peanut butter is delicious and this works on a day off.

But if you want a tasty, sunshiney breakfast that might make you feel like you are on holiday for 3 minutes while you eat it, I urge you to try. It is so delicious.

Pan con tomate

  • Total Time: 5 minutes

Ingredients

Scale
  • 1 large tomato
  • 1 slice decent bread
  • 1 clove garlic
  • Extra virgin olive oil
  • Salt

Instructions

  1. Toast the bread.
  2. Cut a small slice off the tomato and grate the rest of the tomato over a bowl. The skin wil remain in your hand, the delicious tomato goodness will go into the bowl.
  3. When the bread is toasted, rub with the garlic clove.
  4. Spread the bread with the tomato mixture and drizzle with oil and salt.
  5. Enjoy.
